Can some one tell me what size the ball bearings are and how many go in each side?

yes in here:

make sure you pick front or rear and the correct hub

anhow likley to be 1/4" for rears and 3/16" for fronts. SJS sell good quality balls

All Deore have 18 x 1/4 inch bearings in the rear hub and 20 x 3/16 inch bearings in the front hub.
